    ABOUT TADASHI YAMADA

    (Mad) Ramen Chef / Producer

    With 15 years of ramen chef experience, Tadashi trained in Tokyo, then moved to Germany, managing a ramen restaurant for eight years and helping launch one in the Netherlands. Now in Portugal, he creates region-inspired ramen using local ingredients.

    His hobby is making noodles while listening to classical music and even thinks about ramen when he’s sleeping! Machiko is a big fan of his super meticulous work.

    His bowls are crafted with obsession, precision, and soul. For two nights only, Berlin gets to taste the madness.

    ●Pork & Shrimp Shumai with Madeira Wine Mustard Sauce 豚肉と海老の焼売 マデイラワインのマスタードソース A signature dish of Chef Yamada since his time in Germany: juicy shumai filled with coarsely minced pork, shrimp, and onion.  
    ●Berlin Shoyu Ramen ベルリン醤油ラーメンA bowl rooted in Japanese tradition. The 100% chicken and soy sauce broth is deeply flavorful, paired with springy noodles made from Japanese wheat, whole eggs, and spelt flour.

    TERMS OF SERVICE (TOS)
    Reservations only – Menu payment (€45 per person) is required in advance at the time of booking.
    Each seating is 75 minutes. We are unable to extend your time if you arrive late, so please plan to arrive with plenty of time to spare.
    Seating is provided only for guests ordering a menu (children are an exception). Bench seating is available, so children can be accommodated. Kids’ ramen is available as an on-the-day option.
    We do not have high chairs or booster seats for children.
    Our dishes contain chicken, pork, dairy, and wheat.
    Vegetarian or allergy-friendly options are not available.
    Due to kitchen capacity, no modifications to the menu can be made.
    Each guest is kindly asked to order at least one drink.
    💳 Payment & Cancellation Policy
    This pop-up runs on a prepaid ticket system (€45 per person) for the food menu. On the day, you will only pay for drinks and any extras.
    Free cancellation is available up to 3 days before your reservation.
    Cancellations made within 3 days of your booking will be charged in full.
    If you are transferring your reservation to someone else, please notify us with the original booking name.

    Please choose either September 12 or 13, and select your preferred time slot via the reservation form.
    Each time slot is 75 minutes.
    Indicate the number of people ordering a menu (not total party size).
    Seats are only prepared for those ordering a menu (children are an exception).
    Sharing one course between two people is not allowed (except for children).
    To help us prepare appropriate seating, please include the number of children in the Notes section of the form.
